Peanut Chicken
Peanut Chicken from Spoonsparrow: Ready on the table in just 20 minutes!
Ingredients
- 600 g Chicken breast fillet
- 2 tbsp peanut oil
- 1 Shallot
- 1 tbsp Peanut butter
- 2 tbsp peanuts (coarsely chopped)
- 2 chili peppers
- 150 ml poultry broth
- 1 tsp fresh grated ginger
- soy sauce
- 0.5 bunch cilantro (chopped)
- 150 g cream cheese
- 100 g yogurt
- 0.5 bunch Thai basil (finely chopped)','1 splash lime juice
Instructions

Roast peanuts in a dry pan until fragrant.

Wash, pat dry, and slice chicken breast into strips.

Peel and finely chop the shallot.

Halve chili peppers lengthwise, remove seeds, and finely chop them.

Sauté chicken strips with shallot cubes in hot oil briefly until crisp. Add peanut butter, chilies, and ginger; stir well and deglaze with broth. Reduce heat and simmer for about 2 minutes, stirring frequently until the liquid nearly evaporates. Remove from heat and let cool slightly. Finally add cilantro and remaining peanuts (save one tablespoon) and season with soy sauce.

For the sauce mix cream cheese with yogurt, basil, and lime juice.

Serve warm chicken sprinkled with sauce and remaining peanuts.
