Peach with Quark Cream

Ingredients

  • 4 peaches
  • 0.5 Vanilla pod
  • 4 tsp whole cane sugar
  • 300 g quark
  • 4 tsp acacia honey
  • 80 g whipping cream
  • 250 g raspberries
  • 2 sprigs Mint

Instructions

    Wash the peaches, pierce them several times with a toothpick. Slice the vanilla pod lengthwise and scrape out the seeds. Bring 1/2 l water to a boil with sugar and vanilla. Add the peaches, simmer for 5 min, remove and let cool.

    Squeeze the quark through a cloth, mix in honey. Whip the cream stiffly and fold it in. Chill the quark cream for about 30 min. Puree raspberries with 4 tbsp peach syrup.

    Peel the peaches, halve, pit and cut into wedges. Arrange the quark cream over the peach wedges. Garnish with raspberry puree and mint.
