Ingredients

  • 400 g heavy cream
  • 5 egg yolks
  • 2 EL powdered sugar
  • 75 g dark chocolate
  • 50 g milk chocolate
  • 2 TL speculaas spice
  • 200 g almond speculaas
  • 2 organic oranges (juice)
  • Chocolate rolls (for decoration)

Instructions

    Beat the cream until stiff peaks form. Whisk the egg yolks with powdered sugar in a warm water bath until thick and fluffy.

    Melt the chopped chocolate into the warm egg mixture. Stir in the speculaas spice. Let the custard cool, then fold in the whipped cream. Pour the batter into a greased pan. Cover and freeze for about 5 hours.

    For serving, finely crumble the almond speculaas with a rolling pin and soak it in orange juice in a bowl.

    Briefly dip the pan in hot water, lift the cake onto a plate, cover with the soaked crumbs, and decorate the center with chocolate rolls.
