Pea Vegetable Side

Peas make a delicious side dish. The legumes taste great with both meat and vegetarian meals.

Ingredients
- 800 g fresh peas
- 1 romaine lettuce
- 2 shallots
- 1 Garlic clove
- 1 EL Butter
- 1 EL apple cider vinegar
- 100 ml Vegetable broth
- 1 handful parsley
- Salt
- Pepper
Instructions

Separate peas from pods, rinse and drain. Wash lettuce, shake dry and cut into strips.

Peel shallots and garlic; slice shallots into rings and garlic into thin slices. Melt butter in a pan over low heat, lightly sauté shallots and garlic, add peas and deglaze with apple cider vinegar and broth. Cover and simmer for about 5 minutes.

Add lettuce and continue to cook uncovered for another 3–4 minutes. Wash parsley, shake dry, pluck leaves and roughly chop. Fold into the pea mixture, season with salt and pepper, and serve.
