Ingredients
- 400 g peas (fresh split or frozen)
- 200 g spring onions
- 250 g romaine lettuce
- 4 stalks tarragon
- 4 tbsp olive oil
- 2 tsp butter (5 g)
- Salt
- Pepper
- 2 tbsp lemon juice
- 350 g halloumi cheese (45% fat in total)
- 2 tsp sesame (5 g)

If needed, thaw peas in a sieve. Clean and wash spring onions, cut into 3–4 cm pieces. Wash romaine lettuce, slice into strips. Rinse tarragon, pat dry, pluck leaves, set aside some for garnish.

Heat 2 tbsp olive oil with butter in a pan. Sauté spring onions for 2–3 minutes over medium heat. Add peas and salad, cook another 2–3 minutes. Season with salt, pepper, lemon juice, and fold in tarragon.

Meanwhile slice halloumi into 8 pieces and fry in the remaining oil in another pan for 5 minutes over medium heat on both sides, sprinkling sesame during cooking.

Arrange vegetables on a plate. Place fried cheese on top and garnish with leftover tarragon.
