Pea Soup with Frozen Peas

Spoonsparrow’s creamy pea soup is easy to prepare and tastes great as a light main course or appetizer!
Ingredients
- 1 large starchy potato
- 1 Shallot
- 1 Garlic clove
- 1 tbsp butter
- 1 tbsp Olive Oil
- 650 ml vegetable broth
- 350 g frozen peas
- 200 g heavy cream
- 4 sprigs Mint
- Salt
- ground pepper
- a splash lime juice
- 1 tsp dried chili flakes

Peel, wash, and dice the potato. Peel and finely dice the shallot and garlic. Heat butter and oil in a large pot, then sauté the shallot, garlic, and potato. Deglaze with broth and bring to a boil. Simmer for about 5 minutes, then add peas and cook another 10 minutes until tender.

Add cream and mint, then puree the soup finely. If desired, add more broth to reach your preferred consistency. Season with salt, pepper, and a splash of lime juice. Reheat gently, pour into cups, and sprinkle chili flakes on top. Serve the pea soup warm.
