Ingredients
- 200 g frozen green peas
- 1 tart apple (e.g., Granny Smith)
- 80 ml Vegetable broth
- 250 ml apple juice
- 500 g plain yogurt
- 4 sprigs basil
- 4 sprigs Mint
- Salt
- ground pepper

Let the peas thaw. Peel, quarter, core the apple and dice it into small cubes. Bring the peas with the broth to a boil in a pot and simmer over medium heat for 15 minutes. Add the apple pieces with the apple juice, bring to a boil, steam until soft for 10 minutes, then puree.

Puree the peas as well, mix with the apple purée, basil and mint leaves, and yogurt, seasoning with salt and pepper. Serve in glasses, garnished with chives flowers if desired.
