Pea Omelette

Ingredients
- 6 Eggs
- 80 ml milk
- 200 g peas (fresh split, or frozen)
- 1 handful mint
- Salt
- Pepper (freshly ground)
- Nutmeg (freshly grated)

Whisk the eggs vigorously and stir in the milk. Season with salt, pepper, and nutmeg. Blanch the peas in boiling salted water for 5 minutes and drain well. Wash and pat dry the mint leaves.

In a pan melt butter and pour in half of the egg mixture. Sprinkle with mint leaves and peas, then pour the remaining eggs over it. Cook on low heat for 2-3 minutes, then flip the omelette using a large flat plate or lid of similar size to slide the uncooked side back into the pan. Finish cooking for another 1-2 minutes.

Slide the omelette onto a large plate or board, cut into small rectangles, insert a wooden skewer into each piece, and serve warm.
