Ingredients

  • 8 eggs
  • Pepper (freshly ground)
  • Salt
  • 200 g grated cheese (e.g., cheddar)
  • 6 tbsp heavy cream
  • 1 tbsp freshly chopped parsley
  • 2 tbsp chive rolls
  • butter (for frying)

Instructions

    Preheat the oven to 220°C (428°F).

    Whisk the eggs, season with pepper and a pinch of salt. Mix in the grated cheese, heavy cream, and herbs.

    Heat a little butter in a hot pan and pour in some of the whisked eggs. Let it set slightly, then top with one‑quarter of the cheese mixture. Transfer to the oven on the upper rack for about 5 minutes until the cheese melts. Repeat to make four omelettes.

    Remove from the oven, fold, and serve.
