Pea-Mango Soup with Sesame Oil

Ingredients
- 1 onion
- 1 Carrot
- 2 tbsp butter
- 100 g yellow split peas
- 1 tsp curry powder
- 1 Mango
- 1 tbsp Lemon Juice
- Salt
- Cayenne pepper
- sesame oil
- 2 tbsp chopped pistachios
- mint
Instructions

Peel the onion and carrot. Dice them finely and sauté in hot butter for 1-2 minutes. Add the peas and curry powder, then pour in broth. Simmer gently for about an hour, stirring occasionally until the peas are tender.

Peel the mango, remove the pit, and cut into pieces. Add to the soup and blend until smooth. If a thicker consistency is desired, let it reduce further or add more broth. Season with lemon juice, salt, and cayenne pepper.

Serve the soup in bowls, garnished with a few drops of sesame oil, chopped pistachios, and mint leaves.
