Pea Noodle Soup

Ingredients

  • 150 g pasta noodles
  • Salt
  • 2 stalks celery
  • 1 onion
  • 1 Garlic clove
  • 250 g Peas (frozen)
  • 2 tbsp olive oil
  • 800 ml vegetable broth
  • 2 tbsp freshly chopped parsley
  • Salt
  • Cayenne pepper

Instructions

    Cook the noodles in salted water until al dente. Rinse with cold water and drain. Wash, trim, and cut the celery into pieces. Peel and finely dice the onion and garlic. Sauté both with the celery and peas in hot oil.

    Add the broth and let everything simmer gently for about 10 minutes. Finally add the noodles and parsley, season with salt and a pinch of cayenne pepper, then serve.
