Pea Crostini

The vegan pea crostini by Spoonsparrow taste fresh thanks to mint and soothe the stomach.

Ingredients

  • 10 stalks mint
  • 1 onion
  • 1 Garlic clove
  • 4 tbsp olive oil
  • 120 g peas (fresh or frozen)
  • 1 lemon
  • Salt
  • Pepper
  • 8 slices whole‑grain baguette

Instructions

    Wash, dry, and roughly chop one third of the mint. Peel the onion and garlic. Dice the onion finely and crush the garlic.

    Heat olive oil in a saucepan, add onions and garlic, sauté until translucent. Add peas, halve the lemon, squeeze juice, add 1 tbsp lemon juice, and cook for 3–4 minutes while stirring.

    Transfer peas to a bowl and mash roughly with a potato masher. Fold in mint and season with salt and pepper.

    Preheat oven to 200 °C (180 °C fan). Bake baguette slices for about 5 minutes, turning halfway, until crisp.

    Serve by spreading 1–2 tbsp pea pesto on each crostini and garnish with remaining mint.
