Ingredients

  • 3 lemons (1 untreated)
  • 6 tender purple artichokes
  • salt, freshly ground pepper
  • 8 tbsp olive oil
  • 1 bundle dandelion
  • frisée salad
  • 1 head radicchio
  • edible flowers (for garnish)

Instructions

    Rinse the untreated lemon and slice it. Place in a bowl of cold water. Trim the stems of the artichokes to 2 cm. Remove the hard, dark green leaves until only the flower base and light green or yellow leaves remain. Cut the tips about halfway off. Quarter the artichokes and remove the pith. Immediately place the quarters in the lemon water to prevent discoloration.

    Squeeze the remaining lemons. Season with salt and pepper and gradually whisk in the olive oil. Slice the artichokes finely and mix with the dressing. Let sit for 15 minutes.

    Clean, rinse, and tear the salads into bite‑size pieces; drain well. Mix the salads with the artichokes and arrange on plates. Garnish with edible flowers as desired and serve.
