Pea and Green Asparagus Pasta

Ingredients

  • 500 g Green Asparagus
  • 200 g Green beans
  • Salt
  • 100 g peas (frozen)
  • 400 g shell pasta
  • 4 tbsp olive oil
  • pepper (from grinder)
  • 2 tbsp lemon juice
  • 2 tbsp chopped mint
  • 2 tbsp freshly grated Parmesan

    Peel the lower third of the asparagus and cut into 1-2 cm pieces. Wash, trim, and halve the beans. Cook asparagus and beans in boiling salted water for about 8 minutes; after 4 minutes add peas and cook until done. Drain, shock in cold water, then drain again.

    Cook shell pasta in salted water to al dente. Heat oil in a large pan, quickly sauté the vegetables, season with salt, pepper, and lemon juice, then mix in the drained pasta. Finally add mint, plate on dishes, and sprinkle with parmesan.
