Pasta with Poultry Bolognese

Ingredients
- 400 g small shell pasta
- Salt
- 400 g chicken breast fillet
- 2 shallots
- 600 g tomatoes
- 3 tbsp olive oil
- 10 g tomato paste (1 tsp)
- 150 ml poultry broth
- Cayenne pepper
Instructions

Cook the pasta according to package instructions in salted water until al dente.

Meanwhile, rinse the chicken breast fillet under cold water, pat dry, then finely chop or feed through a meat grinder.

Peel and finely mince the shallots. Heat tomatoes briefly, shock them, peel, quarter, seed, and dice finely.

Heat oil in a pan. Brown the chicken over medium heat. Add shallots, sauté briefly, stir in tomato paste, deglaze with broth. Add tomatoes and simmer for about 10 minutes.

Drain the pasta. Season the sauce with salt and cayenne pepper and serve with the pasta.
