Stuffed Shell Pasta with Tarragon Hollandaise

Ingredients
- 1 bundle of mirepoix
- 200 g Green beans
- Salt
- 250 g large shell pasta
- 1 splash oil
- 2 tsp coarse mustard
- tarragon
- 2 shallots
- 125 ml water
- 1 packet sauce powder (for hollandaise sauce)
- 100 g cold butter

Clean, wash and finely dice the mirepoix. Wash, trim and finely chop the beans. Cook the vegetables in salted water for 5 minutes, then drain and let them dry well.

Cook the pasta in plenty of salted water with a splash of oil until al dente. Reserve 2 tbsp of cooking water and whisk in the mustard. Mix the vegetables with the mustard water. Drain the pasta and let it dry. Fill the shells with the mixture and place them in a greased baking dish.

Rinse, dry and finely chop the tarragon. Peel and finely dice the shallots. Bring water with the shallots to a boil. Stir in the sauce powder and bring back to a boil. Reduce heat and stir in butter pieces. Add the tarragon. Pour the tarragon hollandaise over the shells and bake at 200-225°C for about 20 minutes.
