Ingredients

  • 400 g puff pastry (refrigerated)
  • 150 g Feta
  • 150 g Low-Fat Quark
  • 50 g crème fraîche
  • 2 Eggs
  • 400 g onions
  • olive oil
  • 8 slices Parma ham
  • 1 bundle arugula

Instructions

  1. 1.

Preheat the oven to 200°C with upper and lower heat.

  2. 2.

Roll out the puff pastry and line a baking sheet with parchment paper using it as a base.

  3. 3.

Dice the feta, mash it with a fork, then mix with quark, crème fraîche and eggs; season with salt, pepper and a splash of lemon juice.

  4. 4.

Peel the onions, slice them into thin rings and sauté in a hot pan with 2 tbsp butter until golden yellow. Remove from the pan and drain on kitchen paper.

  5. 5.

Spread the feta mixture over the pastry, leaving a 1.5 cm border, then distribute the onions on top. Bake in the preheated oven for about 25 minutes. Remove and let cool slightly.

  6. 6.

    Slice the ham into strips.

  7. 7.

Wash, rinse, dry arugula; cut the tart into pieces and serve topped with arugula and ham.
