Pastry Rolls with Sheep Cheese

Ingredients
- 500 g filo or yufka dough (available in Turkish stores; alternatively use puff pastry, rolled very thin)
- 200 g spicy sheep cheese
- 2 bunches parsley
- pepper from the mill
- 2 egg whites (M)
- plenty of oil for frying
Instructions

Carefully separate the dough sheets. Cut each sheet into triangles with the short side about 10-12 cm long. Crumble the sheep cheese with a fork. Rinse the parsley, shake dry and chop. Mix into the cheese and season with pepper.

Brush each pastry triangle thinly with egg white. Place some cheese mixture on the wide side and roll toward the narrow end.

Heat oil about one finger-width thick in a large pan. Fry the pastry rolls until crisp. Drain on kitchen paper.
