Ingredients

  • 500 g zucchini
  • 1 onion
  • 2 Spring Onions
  • 10 g fresh parsley
  • 500 g spelt spaghetti
  • Salt
  • 2 tbsp butter
  • 150 ml heavy cream (at least 30% fat)
  • Pepper (freshly ground)
  • 1 tbsp Lemon Juice

Instructions

    Wash, trim, halve zucchini lengthwise and slice thinly or grate. Peel onion and dice finely. Trim spring onions, wash and cut into rings. Wash parsley, shake dry and pluck leaves.

    Cook spelt spaghetti in plenty of boiling salted water until al dente.

    Heat butter in a pot, sauté onion until translucent. Add spring onions and zucchini, cook briefly, pour in cream and simmer for 3–4 minutes. Season with salt, pepper and lemon juice. Drain pasta and toss with the zucchini ragout. Plate and sprinkle with parsley before serving.
