Ingredients

  • 400 g penne
  • Salt
  • 300 g tomatoes
  • 2 bulbs fennel (500 g)
  • 150 g celery sticks
  • 6 tbsp Olive oil
  • 4 anchovy fillets
  • 50 g capers
  • Pepper
  • 50 g grated Parmesan

Instructions

    Cook pasta in boiling salted water according to package instructions until al dente, drain and reserve about one cup of pasta water.

    Blanch tomatoes, peel, quarter, seed, and dice. Clean and finely chop vegetables; sauté them in hot oil for 1 minute. Add reserved pasta water, anchovy fillets, capers, and tomatoes. Cook for about 5 minutes, seasoning to taste. Mix in drained pasta and warm briefly.
