Ingredients

  • 500 g spaghetti
  • 250 g carrots
  • 150 g Frozen Peas
  • 1 bunch spring onions
  • Salt
  • Pepper (freshly ground)
  • 6 tbsp Olive oil
  • basil (for garnish)

Instructions

    Peel the carrots and slice them into rounds. Thaw the peas. Wash, trim, and cut the spring onions into rings.

    Heat the olive oil in a large pan, sauté the carrots until slightly softened, then add the spring onions and peas and cook briefly together.

    Cook the pasta in plenty of boiling salted water to al dente, drain, reserving about one cup of the cooking liquid. Add the drained pasta to the vegetables, stir in some reserved pasta water, season with salt and pepper, and serve garnished with basil.
