Penne with Vegetable Sauce

Ingredients

  • 500 g penne
  • 1 Zucchini
  • 4 tomatoes
  • 50 g Pecorino (fresh grated)
  • 1 bundle basil
  • 4 tbsp white wine vinegar
  • 100 ml Vegetable broth
  • 3 tbsp olive oil
  • 1 garlic clove (finely chopped)
  • Sea salt
  • pepper (ground)

Instructions

    Cook Penne according to package instructions in plenty of salted water until al dente.

    Wash, peel, halve lengthwise and slice Zucchini into thin strips.

  3. 3.

    Blanch Tomatoes for a few seconds, shock, peel, quarter, seed and dice small cubes. Remove basil leaves from stems.

  4. 4.

    Sauté Zucchini and garlic in hot oil, add tomatoes, deglaze with vinegar and broth, remove from heat, season with salt and pepper, then let cool.

    Drain Penne, plate on bowls and pour vegetable sauce over it.

    Sprinkle with basil and Pecorino before serving.
