Pasta with Vegetables

Ingredients
- 1 Zucchini
- 2 carrots
- 1 Parsnip
- 1 leek
- 2 tbsp white wine vinegar
- 300 g Linguine
- Salt
- Pepper (freshly ground)
- 100 g grated Emmental cheese (45% fat content)
- 6 tbsp Passata tomatoes
- 0.5 tsp paprika powder
- 2 tbsp butter

Wash the zucchini, clean it and shred it lengthwise into thin slices, then cut it into thin strips crosswise. Wash, peel, shred the carrot and parsnip lengthwise into thin slices and also cut them into strips. Halve and wash the leek lengthwise. Cut the leek halves lengthwise into thin strips.

Bring 1 litre of water with salt and vinegar to a boil in a pot. Cook the pasta, zucchini, carrots, parsnip and leek strips in it for approx. 6-8 minutes until al dente. Drain the vegetable noodles in a sieve, season with salt and pepper, and taste. Mix the tomatoes, paprika powder and butter with the vegetable noodles, distribute them on plates, sprinkle with cheese and serve immediately.
