Pasta with Vegetable Sauce

Ingredients

  • 400 g macaroni
  • 400 g Tomatoes
  • 2 EL olive oil
  • 2 shallots
  • 2 Garlic cloves
  • 400 g zucchini
  • 2 carrots
  • 1 yellow bell pepper
  • Salt
  • Pepper (freshly ground)
  • 50 g grated Parmesan
  • basil (for garnish)

Instructions

    Briefly blanch the tomatoes, peel, quarter, seed and dice them.

    Peel and finely chop the shallots and garlic.

  3. 3.

    Wash, trim and dice the zucchini.

  4. 4.

    Peel and cut the carrots into small cubes.

  5. 5.

    Trim the bell pepper and dice its flesh into small cubes.

    Heat olive oil in a pot, sauté the shallots and garlic, add carrots, bell pepper and zucchini, cook briefly, then add tomatoes, season with salt and pepper, cover and simmer for about 8 minutes, taste.

    Cook macaroni in plenty of boiling salted water until al dente. Drain, mix with the sauce, sprinkle with parmesan and garnish with basil leaves before serving.
