Pasta with Vegetable Sauce

Ingredients

  • 2 carrots
  • 200 g small kohlrabi (1 small kohlrabi)
  • 100 g turnip celery root (1 piece)
  • 2 stalks celery
  • 1 Shallot
  • 2 cloves garlic
  • 1 tbsp Olive Oil
  • 500 g diced canned tomatoes
  • Salt
  • Pepper
  • 350 g spaghetti
  • 2 stems Parsley
  • 2 stems basil

Instructions

    Peel and finely dice carrots, kohlrabi, and turnip celery root. Wash, trim, and dice celery stalks.

    Peel and finely chop shallot and garlic. Heat oil in a pan. Sauté shallot and garlic until translucent over medium heat. Add prepared vegetables and sauté briefly. Pour in tomatoes, season with salt and pepper, and simmer for 10 minutes.

    Meanwhile cook spaghetti in boiling salted water according to package instructions until al dente.

    Wash parsley and basil, shake dry, remove leaves, finely chop, and stir into the vegetable sauce. Taste and adjust seasoning.

    Drain pasta and let it drain well. Toss pasta with the vegetable sauce and serve on preheated plates.
