Linguine with Lemon and Arugula

Ingredients

  • 350 g linguine
  • Salt
  • 80 g arugula (1 bundle)
  • 1 Organic lemon
  • 30 g Parmesan cheese
  • 1 Garlic clove
  • 2 tbsp olive oil
  • black pepper

Instructions

    Cook pasta according to package instructions in salted water until al dente.

    Meanwhile, wash and dry the arugula. Rinse the lemon under hot water, pat dry, zest it, then squeeze out the juice. Grate the parmesan.

    Peel the garlic and finely mince it. Heat oil in a pan over medium heat. Sauté the garlic until translucent.

    Drain the pasta. Toss with arugula and lemon zest in the pan. Season with salt, pepper, and lemon juice, then stir in the grated parmesan to coat the pasta.
