Ingredients

  • 300 g Orecchiette noodles
  • 150 g arugula
  • 500 g ripe tomatoes
  • 1 onion
  • 1 Garlic clove
  • 5 tbsp olive oil
  • 80 g Black olives
  • Salt
  • Pepper (freshly ground)
  • 100 g goat cheese

Instructions

    Slice the tomato stems crosswise, blanch, peel, quarter, seed, then dice.

    Clean and rinse the arugula, remove tough stems, and dry by spinning.

    Peel and finely chop the onion and garlic; sauté in hot oil, add tomato cubes, simmer for about 4 minutes, season with salt and pepper, add olives, bring to a boil, then remove from heat.
