Ingredients

  • 1 onion
  • 2 Garlic cloves
  • 2 tbsp olive oil
  • 800 g diced tomatoes (canned)
  • 1 tsp Dried oregano
  • 1 bay leaf
  • Salt
  • pepper (from the mill)
  • 500 g orecchiette pasta
  • 1 handful basil
  • 1 tsp sugar
  • 1 tsp white balsamic vinegar
  • 50 g Parmesan

Instructions

    Peel and finely dice the onion and garlic. Sauté them in hot oil in a pot until translucent.

    Add the tomatoes and stir to combine. Add oregano, the grated bay leaf, salt, and pepper. Simmer gently for 15-20 minutes.

    Meanwhile, cook the pasta in boiling salted water until al dente.

    Rinse the basil, shake dry, and cut into strips. Roughly half of the basil is added to the sauce. Remove the bay leaf and roughly puree the sauce. Season with salt, pepper, sugar, and vinegar.

    Drain the pasta and fold it into the sauce. Plate the pasta, grate parmesan over it, and sprinkle with remaining basil before serving.
