Ingredients

  • 500 g penne
  • 600 g tomatoes
  • 1 large onion
  • 2 EL tomato paste
  • 200 g Cabanossi (sliced)
  • 1 Garlic clove
  • chili peppers (to taste)
  • Salt
  • Pepper
  • 0.5 TL Sugar
  • 2 EL oil
  • 50 ml Vegetable broth
  • parsley (for serving)

Instructions

    Cook the pasta in plenty of boiling salted water until al dente.

    Wash the tomatoes, remove stems and dice them.

  3. 3.

    Peel and finely dice the garlic, sauté in oil, add the Cabanossi slices. Add the tomatoes, tomato paste, and some chili; cook briefly and deglaze with vegetable broth, seasoning with sugar, salt, and pepper.

    Let the sauce simmer for about 5-10 minutes, then combine with drained pasta and serve on plates garnished with parsley.
