Ingredients
- 500 g Orecchiette noodles
- Salad
- 4 tomatoes
- 1 onion
- 400 g salsiccia
- 2 tbsp olive oil
- a splash of dry white wine
- pepper (ground)
- thyme (for garnish)

Cook the pasta in salted water until al dente.

Wash the tomatoes, cut off stems and slice into strips. Peel, halve, and slice the onion into thin strips. Remove the sausage from its casing and form small balls. Fry the sausage balls in hot oil for 2-3 minutes until golden brown. Remove them from the pan and sauté the onions until translucent. Add the tomatoes and deglaze with wine. Simmer for about 5 minutes, adding a splash of pasta water if needed. Return the sausage balls and drained pasta to the pan, stir briefly, and season with salt and pepper.
