Skewers of Tofu Sausage and Bell Pepper with Dill Potato Salad

Ingredients
- 800 g firm potatoes
- Salt
- 8 cornichons
- 2 handfuls dill
- 4 Spring Onions
- 2 tbsp coarse Dijon mustard
- 2 tbsp salad cream
- 200 g plain yogurt
- pepper (ground)
- 2 red bell peppers
- 8 tofu sausages
- 4 tbsp olive oil

Cook the potatoes as boiled potatoes in boiling salted water for about 30 minutes. Drain, peel and let cool.

Slice the cornichons, wash the dill, shake dry and chop. Clean and wash the spring onions. Cut one onion into small rolls, cut the remaining onions into sections of about 5 cm.

Slice the cooled potatoes. Mix mustard, salad cream, yogurt, dill and onion rolls, season with salt and pepper. Fold the resulting yogurt sauce under the potato slices.

Wash the bell peppers, halve them, clean and cut wide strips. Cut the sausages into pieces of about 5 cm. Thread remaining spring onions, peppers and sausage pieces onto wooden skewers. Brush with olive oil. Grill or cook in a pan on all sides for a total of about 10 minutes. Arrange the skewers and potato salad on plates and serve.
