Ingredients

  • 400 g orecchiette pasta
  • Salt
  • 2 Garlic cloves
  • 1 red chili pepper
  • 600 g broccoli (with some green)
  • 2 tbsp olive oil
  • 200 ml vegetable broth
  • 4 slices Parmesan ham
  • pepper (ground)
  • 60 g grated Parmesan

Instructions

    Cook the pasta in salted water al dente. Peel and finely chop the garlic. Wash the chili pepper, cut lengthwise, deseed, remove white membrane, and dice finely.

    Wash the broccoli and divide into small florets. Roughly chop young leaves. Sauté together in hot oil briefly, add garlic and chili, then pour in broth and simmer gently for 6-8 minutes.

    Meanwhile tear the Parmesan ham into small pieces and add it to the broccoli during the last 1-2 minutes. Mix in the parmesan and drained pasta, season with salt and pepper, and serve.
