Ingredients

  • 400 g Tomatoes
  • 1 Red Onion
  • 2 red chili peppers
  • 0.5 handful coriander leaves (or parsley)
  • 2 tbsp Lime juice
  • 1 tsp sugar
  • Salt
  • pepper (from grinder)
  • 500 g mussel pasta
  • 60 g freshly grated hard cheese (e.g., Tilsiter)

Instructions

    Wash the tomatoes, remove the stem ends and dice into small cubes. Peel the onion and finely dice it. Slice the chilies lengthwise (with gloves if desired), remove the seeds and finely dice the flesh. Rinse the coriander, shake dry and finely chop. Mix the tomatoes, onions, chilies and coriander together. Season with lime juice, sugar, salt and pepper.

    Cook the pasta in salted water until al dente. Drain and mix while still slightly wet with the salsa. Divide onto bowls and serve garnished with cheese.
