- 500 g pork (e.g., top loin)
- 1 onion
- 1 Garlic clove
- Salt
- 2 ancho chilis
- 50 g clarified butter
- 300 g corn flour
- 100 ml meat broth
- 12 corn husks

Cut the pork into thin strips. Peel and finely dice the onion and garlic. Sauté the pork in 1 tbsp clarified butter, add onion and garlic, cook together, then deglaze with meat broth and bring to a boil once. Strain the pork through a sieve, reserving the liquid.

Soak the ancho chilis for about 10 minutes in ~100 ml hot water, then blend into a puree. Heat the puree for 2-3 minutes in 1 tbsp hot clarified butter while stirring. Add the pork, season with salt, and remove from heat.
