Ingredients

  • 250 g lentils (mixed, soaked in water)
  • 2 onions
  • 2 red pepperoncini
  • 1 EL Butter
  • 0.333 bunch of curly parsley
  • 350 g Pappardelle
  • Salt
  • 2 EL oil
  • 6 EL white balsamic vinegar
  • 50 ml Vegetable broth
  • Pepper

Instructions

    Cook the lentils in plenty of boiling water until al dente. Peel and dice the onions. Wash the pepperoncini and cut into rings. Heat the butter in a pan and sauté the onions with the pepperoncini. Rinse, dry shake, and chop the parsley.

    Boil the pappardelle in plenty of salted water. Drain, shock with ice water, and let drain. Drain the lentils and let them also drain. Add the oil, vinegar, and broth, along with the remaining ingredients. Mix everything together, season with salt and pepper, and let it rest for 30 minutes. Serve garnished with parsley.
