Pasta with Shrimp, Snow Peas and Lemon

Ingredients
- 150 g snow peas
- Salt
- 1 onion
- 2 Garlic cloves
- 1 untreated lemon
- 400 g tagliatelle
- 1 tbsp butter
- 200 g heavy cream
- 150 g raw, peeled shrimp
- white pepper (freshly ground)
- Cayenne pepper
- 70 g pecorino cheese (freshly grated)
Instructions

Wash the snow peas and trim the ends. Bring a pot of plenty salted water to a boil. Blanch the snow peas for 2 minutes, then lift out and shock in cold water.

Peel and finely chop the onion and garlic. Wash the lemon hot and dry it. Thinly slice the zest and finely mince it; squeeze half a lemon for juice.

Cook the pasta in plenty of boiling salted water until al dente.

Meanwhile heat butter in a pot. Sauté the onions and garlic until translucent. Pour in the lemon zest and juice, letting it thicken into a creamy sauce over medium heat.

Add the snow peas and shrimp to the lemon sauce, warm through, and season with salt, pepper and cayenne pepper.

Drain the pasta, toss it with the sauce in a warmed bowl, and serve immediately sprinkled with pecorino cheese.
