Ingredients

  • 400 g spaghetti
  • 600 g mixed fresh mushrooms (seasonal, cleaned and sliced if desired)
  • 2 large shallots (finely chopped)
  • 1 Garlic clove
  • 2 tbsp mint (finely chopped)
  • mint leaves for garnish
  • 4 tbsp olive oil
  • Salt
  • ground pepper

Instructions

    Cook the noodles in boiling salted water according to package instructions until al dente.

    Briefly sauté mushrooms and shallots in hot olive oil, stir in pressed garlic and mint, then simmer gently for a few minutes. Season with salt and pepper, fold in drained spaghetti, and serve garnished with fresh mint leaves.
