Ingredients

  • 300 g shiitake mushrooms
  • 250 g Cherry Tomatoes
  • 80 g Arugula (1 bunch)
  • 2 Garlic cloves
  • 350 g penne pasta
  • Salt
  • 1 tsp Olive oil
  • Pepper
  • 2 tbsp white balsamic vinegar

Instructions

    Clean the shiitake mushrooms and slice them thinly. Wash the tomatoes and halve them. Rinse the arugula and dry it.

    Peel the garlic and finely chop it.

    Cook the penne according to package instructions in boiling salted water until al dente.

    Meanwhile, heat oil in a pan. Sauté the garlic over medium heat until translucent. Add the mushrooms and cook for about 5 minutes. Stir in the tomatoes, season with salt, pepper, and vinegar. Toss in the arugula just before serving.
