Ingredients

  • 50 g sesame (unpeeled)
  • 2 untreated lemons
  • 2 Garlic cloves
  • 50 ml olive oil
  • Salt
  • Pepper (freshly ground)
  • 500 g penne pasta
  • 1 handful lemon thyme

Instructions

    Roast the sesame in a dry pan until fragrant, then remove and let cool. Wash the lemons hot, dry rub them, and zest. Squeeze out the juice. Peel the garlic and combine with half the sesame in a food processor. Pulse finely while adding the oil. Add the remaining sesame, lemon juice, and zest, and mix well. Season with salt and pepper.

    Cook the pasta in boiling salted water until al dente. Shake off the thyme leaves, dry them, and pluck half of the leaves.

    Combine the hot noodles with the pesto and thyme, tossing to coat. Serve on bowls garnished with the remaining thyme.
