Pasta with Sardines

Ingredients

  • 250 g sardines (pre-cooked without head)
  • Salt
  • Pepper (freshly ground)
  • 5 tbsp olive oil
  • 500 g tube pasta (e.g., macaroni)
  • 1 red chili pepper
  • 2 cloves garlic
  • 1 untreated lemon
  • 2 tbsp white bread crumbs
  • 1 handful chopped herbs (parsley, oregano, thyme)
  • 40 g grated Parmesan

Instructions

    Rinse the sardines and pat dry. Lightly season with salt and pepper and drizzle with 1 tbsp olive oil. Grill on a hot grill, turning occasionally, for about 5 minutes.

    Cook the pasta in salted water until al dente.

    Wash the chili pepper, halve it, remove seeds, and slice into strips. Peel and finely chop the garlic. Wash the lemon, pat dry, grate the zest, and squeeze out some juice. Briefly sauté the garlic with the chili in the remaining oil. Add the bread crumbs and let them lightly brown. Remove the sardines from the grill, add them to the crumbs, and gently break them apart with a spatula. Mix in the herbs, lemon zest, parmesan, and drained pasta, seasoning with lemon juice, salt, and pepper.
