Cold Tomato Pasta

Ingredients

  • 800 g tomatoes
  • 1 bunch Basil
  • 2 cloves garlic
  • 2 fresh peperoncini
  • 4 tbsp extra virgin olive oil
  • Salt
  • 500 g spaghetti
  • 50 g freshly grated pecorino

    Blanch the tomatoes for a few seconds, cool them in ice water, peel, quarter, seed and finely dice. Wash the basil, shake dry, pluck leaves and roughly chop. Peel the garlic and dice very finely. Wash the peperoncini, cut lengthwise, optionally deseed, remove the white membrane and dice finely.

    Combine all ingredients, marinate with oil, season with salt and let sit overnight in a cool place. Cook the pasta in plenty of boiling salted water until al dente. In a preheated bowl mix with the cold sauce and serve immediately sprinkled with pecorino.
