Pasta with Red Mullet

- 500 g spaghetti
- Salz
- 500 g Red mullet fillet
- 4 Spring Onions
- 1 Garlic clove
- 2 cm fresh ginger
- pepper (ground)
- 1 EL vegetable oil
- 1 TL ground turmeric
- 100 ml dry white wine
- 150 ml fish stock
- 100 ml heavy cream
- pepper (ground)
- dill sprigs

Cook the pasta in salted water until al dente. Rinse and pat dry the red mullet fillets. Cut about two-thirds into strips, finely chop the remainder. Peel and finely chop the spring onions, garlic, and ginger. Salt and pepper the mullet strips, then sear them in a non-stick pan with hot oil on both sides. Remove from the pan and sauté the spring onions, garlic, and ginger until translucent. Add the chopped fish and turmeric, cook briefly, deglaze with wine, let reduce slightly, then add fish stock and cream; simmer gently for 4-5 minutes to thicken. Season with salt and pepper. Toss drained pasta with the mullet strips, warm briefly, and plate.
