Pasta with Pesto

Ingredients

  • 40 g hazelnuts (peeled)
  • 3 handfuls radish leaves
  • 60 ml olive oil
  • 4 tbsp freshly grated Parmesan
  • 4 tbsp crème fraîche
  • Salt
  • Pepper (freshly ground)
  • 1 tsp lemon juice
  • 400 g linguine
  • 5 radishes

Instructions

    Roast the hazelnuts in a pan until fragrant. Remove and let cool.

    Rinse the radish leaves, shake dry and roughly chop. Blend with hazelnuts and some oil, gradually adding remaining olive oil until the pesto reaches a slightly creamy consistency. Stir in Parmesan and crème fraîche, seasoning with salt, lemon juice, and pepper.

    Cook the pasta in salted water to al dente. Rinse, trim, and quarter the radishes. Plate the pasta with pesto and radish pieces, sprinkling extra pepper before serving immediately.
