Ingredients

  • 400 g spaghetti
  • 250 g chopped walnuts
  • 6 untreated oranges
  • 50 ml meat broth (more to taste)
  • 150 g lamb's lettuce (washed)
  • 2 tsp grated ginger
  • Salt
  • 1 tsp Olive oil
  • 2 tsp walnut oil
  • black pepper
  • 50 g cold butter

Instructions

    Cook the spaghetti in plenty of salted water according to package instructions, until al dente. Wash the oranges, grate the zest from three and juice them; filet the remaining three. Toast the walnuts in a mixture of olive and walnut oil, deglaze with orange juice and a bit of broth – lightly salt. Add orange zest and the filleted orange flesh, season, then add the cooked, drained noodles and mix well. Season with ginger and black pepper and fold in butter chunks.

    Wash the lamb's lettuce, shake dry and gently fold into the salad, arrange on plates. Garnish with grated ginger and walnut pieces, serve immediately.
