Ingredients

  • 250 g Mushrooms
  • 1 EL lemon juice
  • 1 Shallot
  • 2 Garlic cloves
  • 400 g penne pasta
  • 2 EL olive oil
  • 2 EL pine nuts
  • 100 ml dry white wine
  • Salt
  • Pepper (freshly ground)
  • 2 EL chopped parsley

Instructions

    Clean the mushrooms, trim stems, slice into rounds and toss with lemon juice.

    Peel and finely chop garlic. Peel shallot, split lengthwise and cut into thin strips.

    Toast pine nuts in a dry pan until fragrant.

    Cook pasta in plenty of boiling salted water to al dente.

    Heat oil in a wide pot, add mushrooms and sauté while stirring; add shallot and garlic and cook briefly, then deglaze with wine, season with salt and pepper, and simmer uncovered over medium heat for about 5 minutes.

    Drain pasta, mix with the mushroom sauce, pine nuts, and parsley, plate on warmed dishes and serve immediately.
