Spaghetti with Tomatoes

Ingredients

  • 400 g spaghetti
  • Salt
  • Pepper (freshly ground)
  • 700 g tomatoes
  • 2 cloves garlic
  • 2 handfuls fresh basil
  • olive oil (cold pressed)
  • parmesan cheese (freshly grated)
  • butter

Instructions

    Wash tomatoes, blanch them, peel, halve, core and dice. Press the garlic cloves through a press and mix with tomato cubes and 2 tbsp olive oil. Salt and pepper.

    Cook spaghetti in plenty of salted water until al dente and drain. Reserve one cup of cooking water. Mix spaghetti with 2 tsp butter and 3-4 tbsp reserved cooking water. Quickly fold in tomatoes and basil leaves. Season with pepper and sprinkle generously with parmesan, serve immediately.
