Pasta with Lamb

Ingredients

  • 300 g lamb fillet
  • 500 g tomatoes
  • 350 g pasta
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 200 ml broth (glass)
  • sauce thickener
  • 2 tbsp finely chopped parsley

Instructions

    Slice lamb fillets diagonally into about 1 cm thick slices.

    Wash tomatoes, quarter them, remove seeds and dice.

    Cook pasta in plenty of boiling salted water until al dente.

    Brown lamb in hot oil for about 3 minutes, season with salt and pepper, then remove. Add tomato pieces to the pan fat, sauté for about 5 minutes. Add broth, simmer for about 3 minutes, thicken if needed with sauce thickener. Return lamb to the pan and keep warm.

    Drain pasta and mix with sauce, stir in parsley, taste, plate on dishes, serve hot.
