Noodles with Chicken

Ingredients

  • 500 g Green Asparagus
  • 300 g chicken breast fillet
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp olive oil
  • 1 untreated lemon (juice and zest)
  • 120 ml chicken stock
  • 350 g fusilli
  • 2 sprigs thyme
  • 50 g freshly grated Parmesan

Instructions

    Peel the lower third of the asparagus and cut the stalks into 3-4 cm pieces. Rinse the chicken, pat dry, and slice into strips. Season with salt and pepper and brown in a hot pan with 1 tbsp oil until golden. Remove from the pan and sauté the asparagus in the remaining oil. Deglaze with lemon juice and stock, add zest, cover and steam for 8-10 minutes until tender.

    Cook the fusilli in salted water to al dente.

    Add the chicken to the asparagus and let it simmer gently on low heat for a few minutes. Season with salt and pepper, then fold in the drained pasta with the thyme leaves.

    Plate on bowls and sprinkle with parmesan before serving.
