Ingredients

  • 300 g radicchio
  • Salt
  • 2 small red onions
  • 0.5 dried pepperoncini
  • 2 tbsp olive oil
  • sugar
  • 125 ml dry red wine
  • 125 ml meat broth
  • 400 g macaroni (chitarra or linguine)
  • pepper (ground)

Instructions

    Wash the radicchio, cut it lengthwise in half and remove the core. Slice into about 1 cm wide strips and blanch in boiling salted water for about 1 minute. Drain, shock with cold water and let drain.

    Peel the onions and slice them thinly. Finely chop the pepperoncini. Heat the oil in a pan and sauté the onions with the pepperoncini. Sprinkle with 1 tsp sugar and let caramelize slightly. Then pour in the wine and broth and simmer gently for 8-12 minutes.

    Meanwhile, cook the pasta in salted water until al dente.

    Let the radicchio warm briefly in the sauce and season the sauce with salt, pepper and sugar. Toss the drained pasta into the sauce and serve sprinkled with grated Parmesan.
