Pasta with Legumes

Ingredients
- 500 g Tagliatelle
- 200 g peas
- 200 g beans
- Salt
- pepper (ground)
- olive oil
- 0.5 tsp saffron strands
- 5 spring onions
- 3 tbsp Basil
- parmesan
Instructions

Strip the peas and beans from their shells. Blanch peas in boiling salted water for 4 minutes, then drain. Blanch beans for 8 minutes in boiling salted water, then drain.

Wash, trim, and slice the spring onions into rings.

Heat 4 tbsp oil and sauté the spring onions until translucent. Quickly toss in the peas and beans with the hot oil. Season with salt and pepper and set aside. Cook tagliatelle in plenty of salted water to al dente, then drain. Reserve one cup of pasta cooking liquid. Add the vegetables, 1 tbsp of reserved cooking liquid, basil, saffron strands, and the pasta; mix thoroughly. Optionally season further and serve sprinkled with parmesan shavings.
